Easy Egg Nog Recipe - A Family Holiday Drink Favorite
My Aunt Mary Jane's Famous Egg Nog Recipe
I never liked egg nog until I tried my aunt's recipe a few years ago. Ever since then, I've been hooked. So hooked, in fact, that I enjoy it both with and without the rum, and at all times of the year. If I were coming up with a slogan for this egg nog, it would be this: "Egg Nog: Not just for the holidays anymore!"
Anyway, it's simple to make, and once you taste it, you'll have a hard time not drinking a whole batch yourself!
Ingredients:
6 eggs or 1 1/2 cups Egg Beaters
1 cup sugar
1/2 teaspoon salt
1 cup spiced rum
1 quart light cream
dash of vanilla extract
nutmeg or cinnamon
Preparation:
In a large bowl, beat the eggs until light and foamy. I normally use Egg Beaters, which are healthier and less scary than drinking raw eggs. I do still beat the Egg Beaters a bit before adding further ingredients. After beating, add sugar and salt, then beat the mixture until it's thick and lemon-colored. I beat by hand using a wire whisk.
Next, stir in the rum and light cream, and a dash of vanilla extract. Chill the mixture for at least 3 hours. When ready to serve, ladle into cups and sprinkle nutmeg or cinnamon on top.
This recipe can be prepared without the rum for an equally delicious, non-alcoholic beverage. Also, for a lower-calorie version, my sister sometimes substitutes half-and-half for the light cream, and it's just as tasty. Enjoy, and please let me know what you think!

how many people does this serve?
It makes a little less than half a gallon (just over 7 cups), and I'd say it's about 6-8 servings. It's rich, so most people like small glasses (I, on the other hand, could drink it by the pint).

I love egg nog, but rarely buy any except around the holidays. I'll have to try this - I never thought about making it myself. Thanks!
